eSIM doesn’t really increase surveillance compared to a physical SIM. Your carrier can still track location and device info as long as the phone is on, and the cellular baseband is closed either way. A removable SIM mainly helps for convenience, not privacy.
Switching off big tech OSes doesn’t usually make you a bigger target. Most surveillance is mass data collection. Using a Linux or privacy-focused OS reduces data sharing and gives you more control, even if you blend in less.
