When I installed OpenVPN on my server, I let it install the IPV6. Is there a way to change that without uninstalling and reinstalling?

You can simply select your local network to only connect via IPv4 under the Network Settings. 
Also, you can do that on your router as well (I have). IPv6 still has connectivity issues and conflicts for the time being. Hopefully, they will fix it in the future.
